Indonesian Beef Skillet

20 minutes“Curry powder is a great staple spice to have on hand. It keeps fresh for about 3 months in the cabinet so, use it often. One-half teaspoon lifts an ordinary salad dressing, cream soup or sauce to another level.”
Ingredients
Serves 4
- 1 pound beef sirloin or flank steak, cut into thin slices
- 1/3 cup vegetable oil, divided
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1 tablespoon cornstarch
- 1 medium onion, chopped
- 2 large cloves garlic, minced
- 1 tablespoon curry powder
- 2 tablespoons ketchup
- 2 green onions, cut into 2-inch lengths
Directions

Combine beef with 1 tablespoon oil, soy sauce and salt. Let stand for 15 minutes. Stir in cornstarch.

Heat a large skillet over medium-high heat. Add 2 tablespoons oil. Heat until hot but not smoking. Add beef. Cook, stirring constantly, until just browned, about 2 minutes. Remove from skillet.

Wipe out skillet. Heat remaining oil in skillet over medium-low heat. Add onion and garlic. Cook, stirring, until slightly brown, about 10 minutes. Add curry powder and ketchup. Mix well.

Return beef to skillet. Cook, stirring, until heated through. Add green onions. Cook until slightly wilted, about 2 minutes.
