Quick Beef Hash Skillet

25 minutes“Use the leftover corned beef for Reuben sandwiches. Layer sliced corned beef, sauerkraut and Swiss cheese on rye bread spread with Thousand Island dressing. Grill as for a grilled cheese sandwich.”
Ingredients
Serves 4
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 cup frozen chopped potatoes
- 1 cup frozen chopped carrots
- 1/3 cup water
- 1 medium green bell pepper, chopped
- 1/2 teaspoon pepper
- 1/2 (12-ounce) can corned beef
- 3 green onions, chopped
Directions

Heat oil in a medium skillet over medium-high heat. Add onion. Cook, stirring occasionally, for about 5 minutes.

Meanwhile, combine potatoes, carrots and 1/3 cup water in a microwave-safe dish. Microwave, covered, on HIGH for 6 minutes, or until vegetables are fully cooked.

Add potatoes, carrots, bell pepper and pepper to skillet. Cook, stirring frequently, for about 5 minutes.

Add corned beef to skillet. Cook until hot, about 10 minutes longer. Sprinkle with green onions.
