Crumble-top Apple Muffins

Warm, fresh-baked apple muffins topped withwalnuts and brown sugar are a great way tostart the day.

Ingredients

 

  • 3/4 cup (11/2 sticks) butter, melted, divided
  • 13/4 cups all-purpose flour, divided
  • 1/2 cup chopped walnuts
  • 1/4 cup firmly packed brown sugar
  • 3/4 cup granulated sugar
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 3/4 cup peeled, diced Granny Smith apple
Directions

    Preheat oven to 375°F. Line a 12-cup muffin pan with paper liners. Combine 3 tbsp. butter, 1/4 cup flour, the walnuts and brown sugar in a small bowl until crumbly. Set aside.

    Combine the remaining flour, granulated sugar, baking powder and cinnamon in a large bowl.

    Combine the egg, milk and the remaining butter in a medium bowl. Stir into the dry ingredients until combined. Fold in the apple.

    Spoon the batter into the muffin cups. Sprinkle the crumble topping over the batter. Bake until the muffins spring back slightly when touched, 20–25 minutes. Cool in the pan for 5 minutes. Remove from the pan and cool completely on a wire rack.
