Garlic Potato Bread

Ingredients

 

  • 3–31/2 cups all-purpose flour, divided
  • 2/3 cup instant mashed potato flakes
  • 1 package (1/4 oz.) quick-rising yeast
  • 2 tbsp. sugar
  • 1 tsp. salt
  • 1 large egg
  • 3 tbsp. butter or margarine
  • 2 tbsp. chopped roasted garlic (from a 4-oz. jar) or 2 cloves garlic, chopped
Directions

    Lightly spray a 9- x 5-inch loaf pan with nonstick cooking spray. Combine 21/2 cups flour, the potato flakes, yeast, sugar and salt in a large bowl until well mixed. Stir in the egg.

    Heat 11/4 cups water, the butter and garlic in a small saucepan over medium heat until very warm(120°F–130°F, butter does not need to melt). Pour into the flour mixture. Mix vigorously for 1 minute. Mix in enough of the remaining flour to make a soft dough that forms a ball and leaves the side of the bowl. Spread the dough evenly in the prepared pan.

    Cover the pan loosely with plastic wrap that has been sprayed with nonstick cooking spray. Let rise in a warm place until almost double in size, about 30 minutes. Remove the plastic wrap.

    Meanwhile, preheat oven to 375°F. Bake until golden brown, 30–35 minutes. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
