Applesauce Buns

25 minutes“Making your own applesauce is thrifty and easy to do. To make 1/4 cup, peel and core 2 Golden Delicious apples. Chop them and cook slowly in 1 tablespoon butter, stirring occasionally, for 10 minutes.”
Ingredients
Serves 12
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 1/2 tablespoons baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1 cup buttermilk
- 1 stick butter, melted
- 1 1/2 teaspoons vanilla extract
- 1/3 cup unsweetened applesauce
- TOPPING:
- 3 tablespoons honey, melted
- 1/4 cup chopped almonds

Preheat oven to 375°F. Grease 12 muffin cups. Combine flour, sugar, baking powder and salt in a medium bowl; mix well.

Combine egg, buttermilk, butter and vanilla in a small bowl; mix well. Add egg mixture to flour mixture; stir just until blended.

Spoon batter into prepared muffin cups, filling each two-thirds full. Spoon 1 heaping teaspoon applesauce into each center.

Bake until buns are golden brown, about 25 minutes. Cool in pan. Brush tops with melted honey. Sprinkle with almonds. Cool completely.

Cleanup will be faster if you remove the buns from the muffin cups before brushing with honey. Place buns on waxed paper, brush with honey, and sprinkle with almonds. Then just throw away the waxed paper.
