Holiday Cranberry Bread

Fresh cranberries are least expensive in the winter. Double this recipe and use a whole bag of berries. You will eliminate waste, plus you will have one loaf to keep and three to give as gifts.

Fresh cranberries are least expensive in the winter. Double this recipe and use a whole bag of berries. You will eliminate waste, plus you will have one loaf to keep and three to give as gifts.

Ingredients

Serves 16 

  • 1 1/2 cups sugar
  • 1 stick margarine, softened
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup sour cream
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh cranberries
Directions

    Preheat oven to 350°F. Grease and flour 2 loaf pans. Beat sugar and margarine in a large bowl with an electric mixer set at medium speed until fluffy, about 2 minutes. Add vanilla and eggs; mix well.

    Add sour cream to bowl; mix well. Add flour, baking soda and salt; mix well.

    Stir in cranberries. Divide batter between prepared pans.

    Bake bread until a toothpick inserted in center comes out clean, about 55 minutes.
