Holiday Cranberry Bread

55 minutes“Fresh cranberries are least expensive in the winter. Double this recipe and use a whole bag of berries. You will eliminate waste, plus you will have one loaf to keep and three to give as gifts.”
Ingredients
Serves 16
- 1 1/2 cups sugar
- 1 stick margarine, softened
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup sour cream
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups fresh cranberries
Directions

Preheat oven to 350°F. Grease and flour 2 loaf pans. Beat sugar and margarine in a large bowl with an electric mixer set at medium speed until fluffy, about 2 minutes. Add vanilla and eggs; mix well.

Add sour cream to bowl; mix well. Add flour, baking soda and salt; mix well.

Stir in cranberries. Divide batter between prepared pans.

Bake bread until a toothpick inserted in center comes out clean, about 55 minutes.

To avoid a soggy crust, let the bread cool completely before covering in plastic wrap.
