Jalapeño Cheese Biscuits

No need to add baking mix to your shopping cart. It is less expensive to make your own. For 2 cups, combine 11/2 cups flour, 3 teaspoons baking powder, 1/2 teaspoon salt and 5 tablespoons shortening.

Ingredients

Serves 20 

  • 2 small jalapeños
  • 2 cups instant baking mix
  • 2/3 cup milk
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup melted butter, divided
Directions

    Preheat oven to 450°F. Cut jalapeños lengthwise into halves; discard seeds. Chop finely.

    Combine baking mix, milk and Cheddar in a bowl; mix well. Add jalapeños and 1/4 cup butter. Beat with an electric mixer set at high speed for 30 seconds.

    Drop dough by spoonfuls 2 inches apart onto 2 ungreased baking sheets.

    Bake until golden brown, about 10 minutes. Brush with remaining butter. Serve immediately.
