Banana-Stuffed French Toast

We enjoyed stuffed French toast on leisurely weekend mornings on my grandparents' deck.

Ingredients

Serves 6 

  • 1/4 cup (1/2 stick) butter, divided
  • 2 medium bananas, sliced
  • 1/4 cup firmly packed light brown sugar
  • 4 large eggs
  • 1/2 cup half-and-half
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 6 slices challah bread, 2 inches thick
  • 4 ounces cream cheese, softened
Directions

    Melt 2 tbsp. butter in a large skillet over medium-high heat. Add the banana slices in a single layer. Sprinkle evenly with the brown sugar. Cook until the banana slices begin to caramelize on the bottom, 2–3 minutes. Turn with a spatula. Cook for 1 minute longer.

    Combine the eggs, half-and-half, cinnamon and vanilla in a large bowl. Whisk until blended. Pour half of the egg mixture into an ungreased 13- x 9-inch baking dish.

    Cut deep pockets into each slice of the bread. Stuff each bread slice with the cream cheese and caramelized bananas. Place the stuffed bread slices in the egg mixture. Pour the remaining egg mixture over the tops of the bread.

    Melt the remaining butter in a large nonstick skillet over medium heat. Add 2 or 3 coated bread slices. Cook until the French toast is golden brown, 5–7 minutes. Repeat with the remaining coated bread slices.
