Breakfast Sausage Patties

Ingredients
Serves 8
- 1 1/2 pounds ground pork
- 1/2 pound ground turkey
- 2 teaspoons ground sage
- 1 1/2 teaspoons salt
- 1 to 1 1/2 teaspoons black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon fennel seed, crushed, optional
Directions

Combine ground pork, ground turkey, sage, salt, black pepper, thyme and fennel seed, if desired, in large bowl; mix well. Cover and refrigerate for at least 1 hour or up to 24 hours.

For each sausage pattie, shape 1/4 cup pork mixture into a 1/2-inch-thick pattie, about 2 1/2 inches in diameter.

Heat a large skillet over medium-high heat until hot. Add enough sausage patties as will fit without crowding the skillet. Cook sausage patties about 4 minutes, turning over halfway through cooking time.

Reduce heat to medium-low and continue cooking until sausage patties are no longer pink in center, about 6 to 8 minutes, turning over halfway through cooking time. Repeat with remaining sausage patties. Keep patties warm until ready to serve. Serve with scrambled eggs, fresh fruit and muffins, if desired.

Grandma's Secret Trick
Grandpa had a taste for spicier food and liked his breakfast sausage "with a kick to it." So Grandma divided the seasoned meat mixture in half and mixed a dash of red pepper flakes into one half. This was her easy way to make both spicy and mild versions of sausage at the same time and keep everyone smiling at breakfast.
