Broccoli Quiche Appetizers

20 minutes“Bite-size quiches are a big hit at parties—these broccoli, egg and cheese delights are the perfect hot appetizer.”
Ingredients
- 1 package (15 oz.) refrigerated piecrusts
- 1/2 cup finely chopped broccoli
- 1 cup plus 2 tbsp. finely shredded Swiss cheese, divided
- 4 large eggs
- 1/2 cup half-and-half
- 1 tbsp. flour
- 1/2 tsp. salt
- 2 tbsp. finely chopped red bell pepper

Preheat oven to 375°F. Thaw the crusts at room temperature according to package directions. Cut12 rounds from each crust with a 21/2-inch round cutter. Press each round in the bottom and up side of an ungreased miniature muffin cup.

Place the broccoli on a microwave-safe plate. Sprinkle with 1 tbsp. water. Loosely cover with plastic wrap and microwave on HIGH until bright green and crisp-tender, 1–2 minutes. Divide the broccoli and1 cup Swiss cheese among the crust-lined cups.

Whisk together the eggs, cream, flour and salt in a medium bowl. Spoon the egg mixture into each cup. Sprinkle the red pepperand the remaining cheese over each cup.

Bake until the filling is set and the edges arelight golden brown, about 20 minutes. Coolfor 5 minutes on a wire rack. Serve warm.

Entertaining a crowd? Double therecipe and prepare two 24-cup pansof this recipe. Just before the party starts, bake 1 as directed and refrigerate the other. After the party starts, pop the second in the oven and you will have a warm “second round” ready to go.
