Cheddar Spinach Sensation

No one knew what to call Grandma's spinach and egg dish, but it always created a 'sensation' at brunch!

Ingredients

Serves 6 

  • 1/2 pound bacon slices
  • 1 cup sour cream (about 8 ounces)
  • 3 large eggs, separated
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon black pepper
  • 1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
  • 1/2 cup shredded sharp Cheddar cheese (about 2 ounces)
  • 1/2 cup bread crumbs
  • 1 tablespoon butter, melted
Directions

    Preheat oven to 350°F. Lightly grease 2-quart round baking dish.

    Place bacon in single layer in large skillet; cook over medium heat until crisp. Remove from skillet; drain on paper towels. Crumble and set aside.

    Combine sour cream, egg yolks, flour and pepper in large bowl; set aside. Beat egg whites in medium bowl with an electric mixer set at high speed until stiff peaks form. Stir about one-fourth of the egg whites into the sour cream mixture; fold in remaining egg whites.

    Arrange half the spinach in prepared dish. Top with half the sour cream mixture. Sprinkle 1/4 cup Cheddar over sour cream mixture. Sprinkle bacon over Cheddar. Repeat layers, ending with remaining 1/4 cup Cheddar.

    Combine bread crumbs and butter in small bowl; sprinkle evenly over Cheddar.

    Bake until egg mixture is set, about 30 to 35 minutes. Let stand 5 minutes before serving.

Grandma's Secret Trick

When separating egg whites from yolks, Grandma knew the task was easier to accomplish if the eggs were cold from the fridge. She separated each egg white, one at a time, into a small dish for quick inspection and removal of any eggshell or yolk specks. Then she transferred it to the mixing bowl with the other egg whites for beating.
