Soft Granola Bars

Grandma added a glass of milk and fresh fruit to make these bars a quick, filling lunch.

Ingredients

Serves 48 

  • 1 cup firmly packed light brown sugar
  • 1 cup vegetable oil
  • 2 large eggs
  • 2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup raisins
  • 1 cup chopped pecans
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon ground cloves
  • 1/4 cup honey
  • 2 tablespoons butter
Directions

    Preheat the oven to 350ºF.

    Combine brown sugar, vegetable oil and eggs in a large bowl and mix well.

    Stir in the oats, flour, baking soda, salt, raisins, pecans, cinnamon and cloves.

    Press evenly over the bottom of a 15 x 10-inch baking pan. Bake until center is set, about 13 minutes.

    Combine honey and butter in a small saucepan. Heat over medium heat until butter is melted.

    Drizzle honey mixture over hot baked layer. Cool for 15 minutes. Cut into bars. Store in airtight containers for up to 2 weeks.

grandma's secret

By substituting a little whole-wheat flour for some of the all-purpose flour, Grandma made these bars even more nutritious. She also occasionally substituted chopped, roasted peanuts for the pecans and omitted the cloves. The peanuts made the bars taste like candy bars.
