Sour Cream Pancakes

Grandma's pancakes were so luxuriously tender and tasty, a real change from boxed pancake mix.

Ingredients

Serves 6 

  • 4 large eggs, separated
  • 2 cups sour cream
  • 1/2 cup all-purpose flour
  • 1 teaspoon granulated sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
Directions

    Beat egg yolks in a large bowl. Add sour cream and mix well.

    Combine flour, granulated sugar, baking powder, salt and baking soda in a small bowl and mix well. Add to sour cream mixture and mix well.

    Stiffly beat egg whites. Gently fold into sour cream mixture.

    Preheat the griddle to 375ºF. Lightly grease the griddle.

    Pour batter on hot griddle, using about 1/4 cup for each pancake. Cook pancakes until browned on both sides, about 3 to 4 minutes.

Grandma's Secret Tip

For brunch, Grandma turned these into a sort of blintz, using just a little sour cream and cottage cheese. She combined 1/4 cup of each in a bowl with 1 tablespoon sugar and 1/2 teaspoon vanilla extract. She spooned a little of the sour cream mixture onto each pancake, topped it with strawberry jam or orange marmalade, and rolled it to enclose the filling.
