Butter cracker crumbs give these chicken breasts a melt-in-your-mouth crust, but generic or store-brand saltines are much less expensive and give perfectly good results in this recipe.

Ingredients

Serves 4 

  • 4 skinless boneless chicken breast halves (about 5 ounces each)
  • 2 eggs, beaten
  • 28 butter crackers, crushed into 1 cup crumbs
  • 2 tablespoons butter or margarine
  • 1 tablespoon lemon juice
  • 1/4 cup white wine
  • 1/2 cup chicken broth
  • 4 slices Muenster cheese
  • 1 (4-ounce) can mushrooms
Directions

    Combine chicken and eggs in a shallow bowl. Preheat oven to 350°F.

    Spread cracker crumbs in a shallow dish. Coat chicken with crumbs. Heat butter in a large skillet over medium-high heat. Add chicken and cook until browned, about 5 minutes per side.

    Arrange chicken in a small baking dish. Combine lemon juice, wine and chicken broth in a small bowl. Pour over chicken.

    Layer cheese and mushrooms over chicken. Bake until chicken is cooked through, about 45 minutes.
