All-Star Chicken Patties

Ground chicken may often be unavailable or a bit too expensive at the supermarket. Look for ground turkey, which is usually less costly and more widely obtainable.

Ingredients

Serves 6 

  • 1 pound ground chicken
  • 1 egg, lightly beaten
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons minced green onions
  • 2 tablespoons minced parsley, or 2 teaspoons dried parsley
  • 1/3 cup mayonnaise
  • 1 2/3 cups butter-flavored cracker crumbs, divided
  • 2 tablespoons lemon juice (about 1 lemon)
  • 6 tablespoons butter, melted
Directions

    Combine chicken, egg, mustard, salt, cayenne pepper, green onions, parsley, mayonnaise, 1/3 cup cracker crumbs and lemon juice in a medium bowl; mix well with a fork.

    Preheat broiler. Grease broiler pan. Form chicken mixture into 6 patties.

    Spread remaining cracker crumbs on a plate. Coat each pattie in crumbs.

    Place patties on prepared broiler pan; drizzle with butter. Broil until chicken is cooked through, about 10 minutes.
