Basil Broiled Chicken

Ingredients
Serves 4
- 3 tablespoons lemon juice (about the juice of 1 lemon)
- 4 whole chicken breasts (about 8 ounces each)
- 1/4 teaspoon salt
- 1/2 cup fresh basil leaves
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, sliced
- 2 tablespoons olive oil
Directions

Preheat broiler. Squeeze lemon over chicken. Sprinkle with salt.

Place chicken, skin side down, on a broiler pan. Broil chicken 8 inches from heat for 10 minutes. Turn; broil for 5 minutes longer.

Meanwhile, combine basil, Parmesan, garlic and oil in a blender; mix at low speed until well blended.

Spread basil mixture over chicken. Broil chicken until juices run clear when meat is pierced with a knife, about 10 minutes longer.

Grandma's Secret Tip
If fresh basil is unavailable in the supermarket or too expensive, use 1 tablespoon dried basil for this recipe. Add 3 or 4 fresh spinach leaves to the mixture to retain the green color of the sauce.

To keep lemons fresh and ready to use, make sure you remove them from the plastic bag after purchasing. Otherwise, the skins may deteriorate and cause the whole batch to spoil.
