Basil Broiled Chicken

Grandma turned to this easy chicken supper when basil was growing in her garden.

Ingredients

Serves 4 

  • 3 tablespoons lemon juice (about the juice of 1 lemon)
  • 4 whole chicken breasts (about 8 ounces each)
  • 1/4 teaspoon salt
  • 1/2 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, sliced
  • 2 tablespoons olive oil
Directions
  1. 1

    Preheat broiler. Squeeze lemon over chicken. Sprinkle with salt.

    Place chicken, skin side down, on a broiler pan. Broil chicken 8 inches from heat for 10 minutes. Turn; broil for 5 minutes longer.

    Meanwhile, combine basil, Parmesan, garlic and oil in a blender; mix at low speed until well blended.

    Spread basil mixture over chicken. Broil chicken until juices run clear when meat is pierced with a knife, about 10 minutes longer.

Grandma's Secret Tip

If fresh basil is unavailable in the supermarket or too expensive, use 1 tablespoon dried basil for this recipe. Add 3 or 4 fresh spinach leaves to the mixture to retain the green color of the sauce.
