Florida Grilled Chicken

20 minutesInstead of discarding leftover garlic, preserve it by roasting. Oil the cloves, then roast at 375°F for 30 minutes. Freeze roasted garlic for up to 6 months to have on hand to flavor sauces.
Ingredients
Serves 4
- 2 cloves garlic, minced
- 2 teaspoons grated grapefruit peel
- 1/2 cup grapefruit juice
- 1 tablespoon vegetable oil
- 2 tablespoons honey
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 boneless chicken breasts (about 2 1/4 pounds)

Preheat grill or broiler. Combine garlic, grapefruit peel, grapefruit juice, oil, honey, salt and pepper in a small bowl; mix well.

Place chicken on grill; brush with grapefruit juice mixture. Grill, turning once and brushing with grapefruit juice mixture, until cooked through, about 20 minutes.

Place chicken on individual plates.

Heat remaining grapefruit juice mixture in a microwave-safe dish on HIGH for 1 minute. Ladle glaze over chicken.
