Greek Broiled Turkey

Many cooks find they prefer the convenience of bottled reconstituted lemon juice to squeezing fresh lemons. The price is also lower than that of fresh lemons. So you save money as well as time.

Ingredients

Serves 6 

  • 1/2 cup red-wine vinegar
  • Juice of 3 lemons (about 1/2 cup)
  • 1 1/2 tablespoons dried oregano
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 6 turkey tenderloins (about 6 ounces each)
  • 1/2 cup olive oil
Directions

    Combine vinegar, lemon juice, oregano, salt and pepper in a bowl. Stir until salt dissolves. Add olive oil. Stir well. Measure half the vinaigrette and reserve.

    Add turkey to bowl. Stir well. Refrigerate until ready to cook, at least 20 minutes.

    Preheat broiler. Arrange turkey tenderloins on pan.

    Broil turkey 6 inches from heat until browned, about 6 minutes. Turn; broil until juices run clear when meat is pierced with a knife, about 6 minutes longer. Serve vinaigrette as a sauce.
