Honey-Lemon Chicken Kebabs

Ingredients
Serves 6
- 1/3 cup honey
- 1/3 cup soy sauce
- 1/3 cup vegetable oil
- 1/3 cup beer or chicken broth
- 2 cloves garlic, finely chopped
- 1/4 teaspoon pepper
- 2 pounds skinless, boneless chicken breasts, cut into 24 cubes
- 2 whole lemons, cut into 12 wedges
- 24 mushrooms
- 3 green onions, cut into 2-inch pieces
- 2 green bell peppers, cut into 2-inch pieces
- 1 red bell pepper, cut into 2-inch pieces

Mix honey, soy sauce, oil, beer, garlic and pepper in a large bowl; mix well. Reserve 1/3 cup. Add chicken, lemons, mushrooms, green onions and bell peppers to bowl; stir well. Refrigerate.

Preheat grill or broiler. Meanwhile, soak 12 wooden skewers in water.

Drain chicken and vegetables, discarding liquid. Thread chicken and vegetables onto skewers.

Grill or broil kebabs, turning occasionally and brushing with reserved sauce, until chicken is cooked through, about 10 minutes.
