Marinated Lime Chicken

20 minutes“For an inexpensive side dish, make confetti rice. Cook rice according to package directions. Several minutes before the end of cooking, add 1/2 cup drained, canned mixed vegetables. Stir and heat through.”
Ingredients
Serves 4
- 4 fresh limes, cut into halves
- 4 pounds chicken pieces
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 teaspoon dried thyme
- 2 tablespoons vegetable oil
- 1 tablespoon paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions

Rub limes over chicken pieces. Squeeze lime juice into a resealable plastic bag. Add chicken.

Add onion, garlic, red pepper flakes, thyme, oil, paprika, salt and pepper to bag. Shake well. Refrigerate for 30 minutes.

Preheat grill. Remove chicken from bag. Remove garlic and onion from chicken. Discard marinade.

Arrange chicken, skin side down, on grill. Cook, turning several times, until juices run clear when meat is pierced with a knife, about 20 minutes.

Rice is classified by the size of its grain-the shorter the grain, the less expensive the rice. For a real budget-stretcher, use jasmine rice for this pilaf. Rinse it well first to remove some of the starch.
