Spice Islands Chicken

25 minutesSave the pricey boneless chicken breast halves for another night. Instead, save money by using inexpensive chicken pieces such as thighs and drumsticks. Purchase these frozen and in bulk and save even more.
Ingredients
Serves 4
- 3 pounds chicken pieces
- 1/4 cup vegetable oil
- 4 tablespoons melted butter or margarine
- Juice of 1 lemon (about 2 tablespoons)
- 3 tablespoons hot red pepper sauce
- 2 teaspoons paprika
- 1/2 teaspoon ground coriander
- 1 clove garlic
- 1 green onion
- 3 tablespoons chopped fresh parsley
- 1 ( 1/2-inch) piece fresh ginger
- 1 bay leaf, crumbled
Directions

Pat chicken pieces dry. Place chicken in a large bowl.

Combine oil, butter, lemon juice, pepper sauce, paprika, coriander, garlic, green onion, parsley, ginger and bay leaf in a blender or food processor. Process until a paste forms.

Pour half the sauce over chicken. Reserve remaining sauce. Refrigerate chicken for 20 minutes. Preheat grill or broiler. Remove chicken from bowl, reserving marinade.

Grill chicken, brushing with reserved marinade and turning, until juices run clear when meat is pierced with a meat fork, about 25 minutes. Serve with the remaining sauce for dipping.
