Sweet-Rubbed Broiled Chicken

15 minutesFor an easy way to use leftover chicken, make a dynamite salad. Cut chicken into cubes. Combine with pineapple chunks, chopped celery and chopped onion. Stir in a little mayonnaise and season with salt.
Ingredients
Serves 6
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon crushed black peppercorns
- 1/2 teaspoon onion powder
- 12 skinless, boneless chicken thighs (about 3 pounds)
- 1 cup orange juice
- 3 tablespoons butter or margarine
- 1 tablespoon Worcestershire sauce

Preheat broiler. Combine paprika, salt, sugar, peppercorns and onion powder in a small bowl.

Rub paprika mixture into each piece of chicken. Arrange chicken on broiler pan. Broil chicken about 5 minutes.

Meanwhile, combine orange juice, butter and Worcestershire sauce in a small saucepan. Heat over high heat until butter is melted.

Drizzle half the sauce over chicken. Broil, turning once and drizzling with remaining sauce, until juices run clear when meat is pierced with a knife, about 5 minutes on each side.

If you are in a hurry, you can substitute a mixture of 1 teaspoon sugar and 3 teaspoons Cajun seasoning for the rub in step 1.
