Tandoori-Style Grilled Chicken

Ingredients

- 3 1/2 pounds chicken pieces, skin removed
- 3 tablespoons lemon juice (about 1 lemon)
- 1 1/2 tablespoons water
- 1 1/2 teaspoons salt
- 1/4 teaspoon turmeric
- 1 cup plain yogurt
- 4 large cloves garlic, chopped
- 2 tablespoons chopped fresh gingerroot
- 2 1/2 teaspoons ground coriander
- 1 1/2 teaspoons ground cumin
- 1/4 teaspoon cayenne pepper
- 3 tablespoons vegetable oil

Make shallow cuts in chicken pieces at about 1/2-inch intervals.

Combine lemon juice, water, salt and turmeric in a large baking dish. Add chicken. Stir well. Let stand for 5 minutes.

Combine yogurt, garlic, ginger, coriander, cumin and cayenne in a bowl. Reserve half of mixture. Add remaining mixture to chicken in dish. Marinate for 10 minutes. Preheat grill.

Grill chicken, basting with oil, for 10 minutes. Turn; grill, basting with oil, until cooked through, about10 minutes. Serve with the reserved yogurt sauce.
