Country-Style Creamy Chicken

Chicken tenders are the fillets attached to the rib side of the breast meat. Look for them packaged separately in the meat section. They are often less expensive than skinless, boneless chicken breasts.

Ingredients

Serves 6 

  • 3 skinless, boneless chicken breasts (4 ounces each)
  • 3 tablespoons butter or margarine
  • 6 mushrooms, sliced
  • 1 medium onion
  • 1 teaspoon minced garlic
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1 3/4 cups chicken broth
  • 1 teaspoon ketchup
  • 1 cup sour cream
  • 1 (8-ounce) package egg noodles, cooked
Directions

    Cut the chicken into bite-size pieces. Sauté in butter in a large skillet over medium-high heat until light brown on all sides.

    Add mushrooms, onion and garlic. Cook for about 4 minutes. Remove chicken and vegetables with a slotted spoon.

    Blend flour, salt and pepper into pan juices; add broth gradually. Cook, stirring continually, until thickened, about 6 minutes.

    Stir in ketchup, sour cream, chicken and vegetables. Heat to serving temperature, about 3 minutes; do not boil. Serve over noodles.
