Crumb-Coated Chicken Slices

10 minutesA lot of the flavor in this recipe comes from a little high-quality olive oil. If you don't use much olive oil, buy and store a small bottle in the refrigerator to ensure maximum freshness.
Ingredients
Serves 6
- 6 skinless, boneless chicken breast halves, cut into 1/2-inch slices
- Grated peel of 1 lemon
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon dried rosemary
- 2 cloves garlic, minced
- 1/3 cup olive oil, divided
- 3/4 cup bread crumbs
- 1/4 cup Parmesan cheese
Directions

Combine chicken with lemon peel, juice, salt, rosemary, garlic and 2 tablespoons olive oil in a medium bowl. Let stand for 30 minutes.

Meanwhile, combine bread crumbs and Parmesan on a plate or piece of waxed paper.

Heat remaining olive oil in a large skillet over medium-high heat. Coat chicken with bread crumb mixture.

Add chicken to skillet. Cook, turning often, until cooked through, about 8 minutes.

Save cleanup time by combining the chicken and all the marinade ingredients in step 1 in a resealable plastic bag. Simply discard the bag and leftover marinade after removing the chicken for cooking.
