Au Gratin Potatoes

Ingredients
Serves 10
- 4 1/2 to 5 pounds medium potatoes
- 8 ounces sliced bacon
- 8 ounces American cheese, cubed
- 3/4 cup mayonnaise-type salad dressing
- 1/2 cup chopped onion
- 3 tablespoons chopped fresh chives or 1 tablespoon dried chives
Directions

Combine potatoes with enough water to cover in a large saucepan. Cook over medium heat until potatoes are tender, about 26 minutes; drain. Let stand to cool. Peel potatoes and cut into slices.

Cook the bacon in a large skillet over medium-high heat until crisp, about 7 minutes; drain. Crumble bacon; set aside.

Preheat the oven to 350ºF. Lightly grease a 13 × 9-inch baking dish.

Combine American cheese cubes, salad dressing and onion in a large bowl and mix well.

Arrange potatoes in prepared baking dish. Spoon cheese mixture evenly over potatoes. Bake for 35 minutes. Sprinkle with bacon and chives. Bake for 10 minutes. Serve immediately.

Grandma's Secret Tip
Grandma found a way around chopping a big chunk of cheese into cubes. She purchased a package of sliced American cheese, making sure to avoid the type with the slices wrapped individually. She unwrapped the whole package, set the cheese on a flat surface, then sliced down through the stack with vertical and horizontal cuts to make small bits.
