Browned Cream Potatoes

Ingredients
Serves 6
- 8 medium all-purpose potatoes, cooked
- 6 tablespoons butter, divided
- 2 tablespoons all-purpose flour
- 1 cup whipping cream
- 1 cup milk
- 1 1/4 teaspoons salt
- 1/2 teaspoon black pepper
- 3/4 teaspoon nutmeg, divided
Directions

Preheat the oven to 350ºF. Grease a 2-quart or 11 × 7-inch baking dish.

Peel and finely chop the potatoes.

Melt 4 tablespoons butter in a large saucepan over medium heat. Stir in flour. Add cream and milk gradually, stirring continually. Cook mixture, stirring continually, until thickened and bubbly. Stir in salt, black pepper and 1/2 teaspoon nutmeg.

Add potatoes to cream mixture and mix well. Spoon into prepared baking dish.

Dot the top of the potatoes with the remaining butter. Sprinkle with the remaining nutmeg. Bake potatoes until lightly browned, about 45 minutes.

Grandma's Secret Trick
Depending on how much time she had for cooking, Grandma had various ways of cooking the potatoes. Sometimes she boiled them whole, which took about 35 minutes for fist-size potatoes. Sometimes she chopped them to boil them, which reduced the cooking time to about 8 minutes. Sometimes, for what she said was the fluffiest result, she baked the potatoes for 50 minutes, then cooled and peeled them.
