Cheddar Grilled Potatoes

These rich, cheesy and comforting spuds—just perfect on a cool autumn night—were a tradition at Grandma and Grandpa's last cookout of the season.

These rich, cheesy and comforting spuds—just perfect on a cool autumn night—were a tradition at Grandma and Grandpa's last cookout of the season.

Ingredients

Serves 4 

  • 4 russet baking potatoes
  • 3 tablespoons butter or margarine, sliced
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 cup grated Cheddar cheese
  • 2 tablespoons chopped fresh parsley
  • 3/4 cup half-and-half
Directions
  1. 1

    Preheat grill. Fold a 48-inch length of heavy aluminum foil in half widthwise. Cut potatoes into thin lengthwise strips as for French fries.

    Arrange potatoes on center of foil. Melt butter in a small saucepan; drizzle over potatoes.

    Sprinkle with salt, pepper, Cheddar and parsley.

    Fold up edges of foil slightly; pour in half-and-half. Bring the edges of foil together and fold to close securely. Place on grill and cook until potatoes are tender, about 1 hour.

Grandma's Secret Tip

If she didn't have Cheddar on hand, Grandma used most any mild or sharp cheese. I liked it with American cheese; my brother favored it with Gouda.
