Cheddar Potato Pudding

Ingredients
- 2 medium yellow potatoes (about 10 ounces), peeled and cut into 1-inch pieces
- 1/2 cup low-fat milk
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 2/3 cup shredded Cheddar cheese
- 3 1/2 tablespoons thinly sliced green onions (about 3)
- 1 large egg, beaten

Preheat oven to 350°F. Lightly coat a 1-quart casserole dish with nonstick cooking spray. Set aside.

Place the potatoes in a large saucepan and add enough lightly salted water to cover. Bring to a boil. Reduce heat. Cover and simmer until tender, 10–15 minutes. Drain. Mash the potatoes with a potato masher.

Stir the milk, salt and pepper into the mashed potatoes. Add the Cheddar, 3 tbsp. onions and the egg. Stir until combined.

Transfer the potato mixture to the prepared dish. Bake until puffed and lightly golden, 25–35 minutes. Sprinkle with the remaining green onions before serving.
