Dijon New Potatoes

Ingredients
Serves 4
- 1/4 cup Dijon-style mustard
- 2 teaspoons paprika
- 1 teaspoon lime juice
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- 16 medium new red potatoes, scrubbed, cut into quarters
Directions

Preheat oven to 400ºF. Spray a baking sheet with nonstick cooking spray.

Combine mustard, paprika, lime juice, onion powder, garlic powder and cayenne pepper in a large bowl and mix well.

Prick the potatoes several times with a fork. Add to mustard mixture and toss to coat well.

Arrange potatoes 1/2 inch apart on prepared baking sheet. Spoon any remaining mustard mixture over the potatoes.

Bake until potatoes are tender, about 45 to 60 minutes. Serve immediately.

Grandma's Secret Trick
Grandma said that cutting the potatoes into quarters cut down on the cooking time. If she had smaller new potatoes on hand, she left them whole or cut them in half. But if she was in a real hurry, she cut them into quarters also, making small morsels that cooked in just 20 to 25 minutes.
