Drive-In Cheese Fries

Ingredients
Serves 4
- 1 (16-ounce) package frozen French fries
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup milk
- 1 cup shredded sharp Cheddar cheese, divided
- 1 tablespoon chopped pimientos
- 1 tablespoon chopped jalapeños

Preheat the oven to 400ºF.

Arrange French fries in a single layer on a baking sheet. Bake the fries for 8 to 10 minutes. Arrange in 4 individual au gratin baking dishes.

Melt butter in a small saucepan over medium-high heat. Add flour, salt and black pepper and stir until smooth. Stir in the milk. Cook, stirring continually, until thickened, about 2 minutes.

Add 1/2 cup Cheddar to sauce. Cook, stirring continually, until Cheddar is melted, about 2 minutes. Stir in pimientos and jalapeños.

Pour sauce evenly over French fries. Sprinkle with the remaining Cheddar. Bake until the cheese is melted, about 8 to 10 minutes.

Grandma's Secret Tip
When hungry teens were in the house, Grandma transformed these fries into a more filling snack by heating some canned or leftover chili and ladling it onto the cheese-covered fries after they came out of the oven. She made sure there were plenty of napkins!
