Golden Potato Pie

I found this recipe in Grandma's old recipe box. We had a great time remembering how much we had loved it years ago.

I found this recipe in Grandma's old recipe box. We had a great time remembering how much we had loved it years ago.

Ingredients

Serves 8 

  • 1 (16-ounce) container cottage cheese
  • 2 cups mashed potatoes
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup chopped green onions
  • 1 (9-inch) unbaked pie shell
  • 3 tablespoons grated Parmesan cheese
Directions

    Preheat the oven to 425ºF.

    Place cottage cheese in a blender or food processor. Process until smooth.

    Combine mashed potatoes and cottage cheese in a large bowl. Beat with an electric mixer set at medium speed until blended.

    Beat in sour cream, eggs, salt and cayenne pepper. Stir in green onions. Spoon potato mixture into pie shell.

    Bake the pie for 30 minutes. Sprinkle with Parmesan. Bake for 10 minutes longer.
