Golden Potato Pie

Ingredients
Serves 8
- 1 (16-ounce) container cottage cheese
- 2 cups mashed potatoes
- 1/2 cup sour cream
- 2 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/2 cup chopped green onions
- 1 (9-inch) unbaked pie shell
- 3 tablespoons grated Parmesan cheese
Directions

Preheat the oven to 425ºF.

Place cottage cheese in a blender or food processor. Process until smooth.

Combine mashed potatoes and cottage cheese in a large bowl. Beat with an electric mixer set at medium speed until blended.

Beat in sour cream, eggs, salt and cayenne pepper. Stir in green onions. Spoon potato mixture into pie shell.

Bake the pie for 30 minutes. Sprinkle with Parmesan. Bake for 10 minutes longer.

The green onions, a favorite accent of Grandma's, add a touch of color to this savory potato pie. For another appetizing dash of color, as well as a rich taste, she often sprinkled on 1 teaspoon of sweet Hungarian paprika before putting the pie into the oven.
