Grated Potato Casserole

Ingredients

Serves 4 

  • 1/2 cup milk
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup cubed processed American cheese
  • 2 tablespoons butter
  • 1/2 small onion, coarsely chopped
  • 3 medium potatoes (about 18 to 20 ounces), peeled, coarsely chopped
  • 3 green bell pepper rings, optional for garnish
Directions

    Preheat the oven to 350°F. Lightly grease a 10 × 6-inch baking dish.

    Add milk, eggs, salt, black pepper, American cheese, butter, onion and potatoes to a blender in the order listed. Set blender to grate setting. Pulse on and off every 3 seconds just until potatoes are grated, about 1 minute; do not overblend.

    Spoon potato mixture into the prepared baking dish.

    Bake until casserole is golden brown, about 40 to 45 minutes. Garnish with bell pepper rings, if desired. Serve immediately.

Grandma's Secret Tip

Foods should look as great as they taste, my Grandma believed, so she was an enthusiastic garnisher. She often sprinkled a generous amount of paprika on top of this casserole to add a little bit of color. If the paprika was fresh, it gave the casserole a nice flavor boost, too.
