Herbed Cheese Potatoes

35 to 40 minutes“'Are you having company?' I asked Grandma when I saw these potatoes. 'Yes, you and your folks,' she chuckled.”
Ingredients
Serves 6
- 1 1/2 pounds new red potatoes, scrubbed, divided
- 1/2 teaspoon salt, divided
- 1/8 teaspoon black pepper, divided
- 1 1/4 cups whipping cream
- 1 (5.2-ounce) package triple-cream cheese flavored with herbs and garlic
- 2 teaspoons chopped fresh parsley

Preheat the oven to 400ºF. Butter a 9 × 9-inch baking dish.

Cut the potatoes 1/4 inch thick. Arrange half the potatoes overlapping in the bottom of the prepared baking dish. Sprinkle with half the salt and half the black pepper.

Combine whipping cream and cheese in a medium bowl. Beat with an electric mixer set at medium speed until smooth.

Pour half the whipping cream mixture over potatoes in dish. Repeat layers of potatoes, remaining salt, remaining black pepper and whipping cream mixture.

Bake potato mixture until browned, about 35 to 40 minutes. Sprinkle with parsley. Serve immediately.

The high price of soft herbed cheese led Grandma to try a substitution. She combined 5 ounces (about 12/3 small packages) of cream cheese with an envelope of garlic-and-herb salad dressing mix and beat the mixture until smooth.
