Homemade Potato Chips

Ingredients

Serves 4 

  • 2 baking potatoes (about 6 ounces each)
  • 3 tablespoons grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
Directions

    Preheat the oven to 350ºF. Spray a nonstick baking sheet lightly with nonstick cooking spray.

    Scrub the potatoes. Slice into 1/16-inch-thick slices. Arrange potatoes in a single layer on prepared baking sheet.

    Sprinkle potatoes with Parmesan, basil and salt.

    Bake potatoes until lightly browned, 14 to 18 minutes. Transfer to wire racks to cool.

Grandma's Secret Tip

To slice potatoes thinly enough for chips, Grandma used a really sharp knife, a mandoline or a good-quality box grater with a slicer. If she used a knife, she sharpened it before she began cutting. When she used a mandoline, which she often did, she simply passed the potato over the blade for quick, super thin slices of potato. If she used a box grater blade, she cut the potatoes into quarters first so they would fit the small blade.
