New Potato Casserole

30 minutes“Grandpa said that in Ireland potatoes are called 'taties.' So he called this 'New Tatie Casserole.'”
Ingredients
Serves 4
- 6 to 8 medium new potatoes, scrubbed
- 3/4 cup shredded Cheddar cheese, divided
- 1/2 cup ranch salad dressing
- 1/4 cup sour cream
- 1/3 cup bacon bits
- 1 tablespoon dried parsley
- 1 cup lightly crushed cornflakes
- 2 tablespoons butter, melted

Preheat the oven to 350ºF.

Cut potatoes into quarters. Combine potatoes and enough water to cover in a large saucepan. Bring to a boil over medium-high heat. Cook until tender, about 5 minutes; drain. Arrange in a 11/2-quart baking dish.

Combine 1/2 cup Cheddar, salad dressing, sour cream, bacon bits and parsley in a medium bowl and mix well. Spoon over potatoes and mix gently.

Combine cornflakes, butter and remaining Cheddar in a medium bowl and mix well.

Sprinkle cornflake mixture on top of potato mixture. Bake until golden, about 30 minutes. Serve hot.

Grandma's Secret Tip
Grandma found that new potatoes cook very quickly when they are cut into quarters before boiling. Since there's a risk of overcooking them, which causes them to fall apart in the casserole, she checked them frequently-they were usually tender in about 5 minutes.
