New Spring Potatoes

These potatoes were so good with meat loaf. Grandma's secret was beef broth.

These potatoes were so good with meat loaf. Grandma's secret was beef broth.

Ingredients

Serves 6 

  • 2 tablespoons butter
  • 6 green onions, sliced
  • 4 thick slices bacon, chopped
  • 1 1/2 cups chopped peeled tomatoes
  • 1 cup beef broth
  • 24 small new red potatoes, scrubbed, quartered
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
Directions
  1. 1

    Heat butter in a large saucepan over medium-high heat. Sauté the green onions in the hot butter until lightly browned, about 2 minutes.

    Add bacon to green onion mixture. Cook, stirring frequently, for 5 minutes; drain.

    Stir in tomatoes and beef broth. Bring to a boil. Cook for 2 minutes.

    Add the potatoes, salt and black pepper and mix well.

    Simmer mixture, covered, until the potatoes are tender, about 15 minutes. Spoon into a serving bowl. Sprinkle with fresh parsley.

Grandma's Secret Trick

To make these potatoes taste like the ones that came out of her pot roast, Grandma omitted the tomatoes and added about 1/3 cup thinly sliced celery and 1/2 cup sliced carrots and simmered them with the potatoes until tender.
