Pizza Baked Potatoes

Ingredients

- 6 russet potatoes (about 8 oz. each), scrubbed
- 1 tablespoon olive oil
- 2 teaspoon coarse salt
- 1 teaspoon black pepper
- 12 ounces cream cheese, softened
- 1/2 cup pizza sauce
- 4 tablespoons thinly sliced green onions (about 2 medium)
- 1/2 cup diced pepperoni (about 4 oz.)
- 1/2 cup finely shredded mozzarella cheese
- 3 tablespoons thinly sliced fresh basil leaves

Preheat oven to 375°F. Pierce the potatoes with a fork. Rub the potatoes with the oil and sprinkle with the salt and pepper. Place on an ungreased rimmed baking sheet. Bake until tender when pierced with a knife, 35–40 minutes.

Meanwhile, combine the cream cheese, pizza sauce and green onions in a medium bowl. Beat with a wooden spoon until smooth. Cut a small pocket into the top center of each baked potato.

Spoon or pipe the cream cheese mixture generously into the potato pockets. Sprinkle each with the pepperoni and mozzarella. Bake until the cheese is melted, 1–2 minutes. Top with the basil. Serve immediately.
