Pizza Potatoes

Ingredients

Serves 6 

  • 4 cups frozen hash brown potatoes, thawed
  • 1 (2 1/2-ounce) jar sliced mushrooms, divided
  • 1 (14 1/2-ounce) can chunky tomato sauce
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon each Italian seasoning and granulated sugar
  • 3/4 cup shredded mozzarella cheese
  • 1/3 cup shredded Cheddar cheese
  • 1 (2 1/2-ounce) package pastrami, shredded
  • 2 tablespoons chopped green onions
Directions

    Preheat oven to 400ºF. Spray a 9-inch baking dish with nonstick cooking spray.

    Place potatoes in prepared baking dish. Sprinkle with 1 teaspoon salt. Bake for 10 minutes.

    Drain mushrooms. Combine tomato sauce, half the mushrooms, Parmesan, Italian seasoning and sugar in a large bowl and mix well. Spread on top of potatoes.

    Sprinkle potatoes with mozzarella and Cheddar. Sprinkle remaining mushrooms, pastrami and green onions on top.

    Bake until cheese is melted and mixture is hot and bubbly, about 10 minutes. Cut into wedges to serve.

Grandma's Secret Tips!

Grandpa preferred ham to pastrami, so sometimes Grandma used 1/2 cup of chopped ham in place of the pastrami. Other times she used pepperoni or Canadian bacon. For a vegetarian pizza, she substituted black olives for the meat.
