Potato Scallop Surprise

Grandma said this was one potato dish that was great for the family and pretty enough for company.

Ingredients

Serves 6 

  • 6 medium potatoes
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup mayonnaise
  • 3/4 teaspoon seasoned salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 cups chopped celery
  • 1 medium onion, chopped
  • 1/4 cup chopped pimiento
Directions

    Peel and slice the potatoes. Place in enough salted water to cover in a large saucepan. Cook just until tender, about 15 minutes; drain.

    Preheat the oven to 350ºF. Grease a 1 1/2-quart baking dish.

    Melt butter in a small saucepan over medium heat. Stir in flour. Add the milk gradually, stirring continually. Cook, stirring continually, until sauce is thickened, about 3 1/2 minutes.

    Add mayonnaise, seasoned salt, black pepper and cayenne pepper and mix well.

    Layer potatoes, celery, onion, pimiento and sauce one-half at a time in prepared baking dish. Bake for 30 minutes. Serve hot or cold.

As Grandma used to say, "A one-dish meal does all your work for you." To turn this potato scallop into a one-dish meal, Grandma added 1 to 2 cups of chopped ham when layering the potatoes with the remaining ingredients, then she baked the dish as the recipe directed.
