Spicy Skillet Potatoes

Raise the temperature with this richly spiced potato side dish. It adds an extra punch to just about any entrée.

Raise the temperature with this richly spiced potato side dish. It adds an extra punch to just about any entrée.

Ingredients

Serves 4 

  • 1 3/4 pounds Yukon Gold potatoes
  • 3 tablespoons vegetable oil
  • 1 teaspoon dry mustard
  • 2/3 teaspoon ground cumin
  • 2 teaspoons ground coriander
  • 1 fresh green chile pepper, deseeded and finely chopped (optional)
  • 1/2 teaspoon mild chili powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • fresh cilantro leaves, to garnish
Directions

    Peel and cut the potatoes into small pieces. Heat the vegetable oil in a large skillet over medium heat.

    Add the potatoes to the skillet. Sprinkle with the mustard and cumin and stir. Cook, stirring occasionally, until the potatoes are lightly browned and almost cooked through, about 20 minutes.

    Add the coriander, chili powder and chile pepper, if desired, to the potatoes. Season with the salt and pepper. Stir and cook 5 minutes longer. Drain off any excess oil, then divide the potatoes among 4 plates. Garnish with the cilantro leaves. Serve.

For a sweeter taste, replace the Yukon Gold potatoes with the same quantity of sweet potatoes and cook for 10 minutes in Step 2.
