Rolled oats are best when used immediately or frozen within 3 months of purchase. Use the leftovers to add fiber to your breakfast fruit smoothie or to stretch your favorite meat loaf recipe.

Ingredients

Serves 24 

  • 1 1/2 sticks (12 tablespoons) butter or margarine
  • 1 cup light brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups rolled oats
  • 1 cup apricot preserves
  • 1/4 cup toasted chopped pecans
Directions

    Preheat oven to 375°F. Grease a medium baking pan. Beat butter and brown sugar in a large bowl until fluffy. Add flour, baking powder, salt and oats. Beat at low speed until crumbly.

    Press two-thirds of flour mixture in bottom of prepared pan.

    Spread preserves over flour mixture. Sprinkle remaining flour mixture over preserves.

    Sprinkle pecans over top. Bake until golden, about 35 minutes. Cool. Cut into squares.
