Buttery Pastel Cookies

These distinctive and low-cost cookies are party-perfect, so keep a baked batch in the freezer for up to 3 months for unexpected guests. Dress them up with a drizzle of white icing.

These distinctive and low-cost cookies are party-perfect, so keep a baked batch in the freezer for up to 3 months for unexpected guests. Dress them up with a drizzle of white icing.

Ingredients

Serves 60 

  • 2 sticks margarine, softened
  • 1 (3-ounce) package cream cheese, softened
  • 1 cup sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • Food coloring
Directions

    Preheat oven to 375°F. Grease 2 baking sheets. Combine margarine, cream cheese, sugar, egg yolk and vanilla in a bowl. Beat with an electric mixer set at medium speed until fluffy, about 2 minutes.

    Add flour to bowl. Beat well. Divide mixture into 2 or 3 portions. Add a different food coloring to each. Mix well. Refrigerate 1 portion while you work with the other.

    Roll 1-tablespoon portions of dough into balls. Place on prepared baking sheets. Flatten slightly.

    Bake cookies until edges are golden, about 10 minutes. Remove and cool. Repeat with remaining dough.
