Cinnamon Snickerdoodles

10 minutes“Here is a perfect opportunity to save money by using those extra egg yolks or egg whites you may have on hand. You will need 1/2 cup of either yolks, whites or a combination of the two for this recipe.”
Ingredients
Serves 48
- 1 cup shortening
- 1 1/2 cups plus 2 tablespoons sugar
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 2 eggs
- 1/3 cup raisins
- 2 teaspoons cinnamon

Preheat oven to 400°F. Grease 2 baking sheets. Beat shortening and 11/2 cups sugar in a medium bowl with an electric mixer set at medium speed until light and fluffy, about 2 minutes.

Add flour, baking soda, cream of tartar and eggs to bowl; beat well. Add raisins to bowl; mix well.

Shape cookie dough into 1-inch balls. Combine remaining sugar and cinnamon on a plate or piece of waxed paper.

Roll cookies in sugar mixture. Place 11/2 inches apart on prepared baking sheets. Bake until just golden, about 10 minutes.
