5 minutesThese easy-to-make crisp peanut butter and chocolate bar cookies will be less expensive-but just as flavorful-if you use a generic peanut butter instead of a name brand. Look for the best bargain.
Ingredients
Serves 24
- 1/2 cup peanut butter
- 1/2 cup light corn syrup
- 1/2 cup brown sugar
- 4 cups crisp rice cereal
- 1/2 cup peanuts, chopped
- Frosting:
- 2 tablespoons butter
- 4 ounces semisweet chocolate chips
Directions
1
Combine peanut butter, corn syrup and brown sugar in a large skillet. Cook, stirring, over medium heat just until well blended and hot. Remove from heat.
2
Add cereal and peanuts to skillet, stirring quickly to coat with hot peanut butter mixture.
3
Grease a medium baking dish. Press cereal mixture evenly into dish with a buttered wooden spoon.
4
For frosting, melt butter and chocolate chips in a small saucepan over medium-low heat, stirring constantly. Pour frosting over cereal mixture; smooth. Cool. Cut into small bars.

You will save a little time if you use an 8-inch square pan instead of a medium rectangular baking pan-it is easier to press the cereal mixture into a smaller pan. Using a smaller pan will also result in thicker bars.

Peanutty Candy Bar Cookies
If you want to cut the cost of these chewy bars, or if peanut butter chips are not available at your grocery store, use an equal amount of chocolate chips. The flavor will be extra chocolaty.
