If confectioners' sugar is not on hand, there is no need to buy any to make these melt-in-your-mouth cookies. Simply process 1 cup granulated sugar in a food processor until a powder forms.

Ingredients

Serves 48 

  • 2 sticks butter
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour, sifted
  • 1/2 teaspoon salt
  • 1/2 cup confectioners' sugar, sifted
Directions

    Combine butter, sugar and vanilla extract in a large bowl. Beat with an electric mixer set at medium speed until light and fluffy, about 2 minutes.

    Combine flour and salt in a medium bowl; mix well. Add flour mixture to butter mixture, 1/2 cup at a time, beating just until blended. Roll dough into a ball. Chill in freezer for about 30 minutes.

    Preheat oven to 350°F. Shape dough into 1-inch balls. Return dough to freezer if it becomes too warm and sticky. Arrange balls 2 inches apart on ungreased baking sheets.

    Bake until cookies are just golden, about 15 minutes. Meanwhile, place confectioners' sugar in a shallow bowl. Roll hot cookies in confectioners' sugar. Cool on a wire rack.
