Mediterranean Fish Medley

Ingredients

  • 1 pound small new potatoes
  • 1 each large onion and green bell pepper
  • 1 tablespoon olive oil
  • 1 tablespoon coarsely grated gingerroot or 1/8 teaspoon ground ginger
  • 1/2 teaspoon ground cumin
  • 1 clove garlic, minced
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons tomato paste
  • 1/2 teaspoon salt substitute
  • 16 ounces cod fillets (about 1 inch thick)
  • 4 plum tomatoes, thinly sliced
  • 1/2 cup chopped fresh Italian parsley

Directions

    Scrub new potatoes and cut into 1/8-inch-thick slices. Cut the onion into quarters; slice. Coarsely chop the bell pepper.

    Heat olive oil in a large nonstick skillet over medium heat. Add the potatoes. Cook, stirring occasionally, until browned, about 8 minutes.

    Add the onion, gingerroot, cumin and garlic to potatoes in skillet. Sauté until onion is crisp-tender, about 3 to 4 minutes.

    Add bell pepper to skillet and sauté until tender, about 3 to 4 minutes. Stir in vinegar, tomato paste and salt substitute.

    Arrange the fish on top of the vegetables in the skillet. Arrange tomatoes on top of fish. Cook, covered, until fish flakes easily with a fork, about 10 minutes. Transfer the fish and vegetables to individual serving plates. Sprinkle with Italian parsley. Serve immediately.
