Salmon with Dill Sauce

Ingredients
Serves 4
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh lime juice
- 4 (8-ounce) salmon fillets
- 1/4 cup mayonnaise
- 1 tablespoon Dijon-style mustard
- 1 tablespoon chopped fresh dill or 1 teaspoon dried dill
- Fresh dill and lemon wedges, optional for garnish
Directions

Combine lemon juice and lime juice in small glass baking dish. Rinse salmon fillets; pat dry with paper towels. Place salmon fillets in juice mixture; marinate about 10 minutes, turning once.

For dill sauce, place mayonnaise, mustard and chopped dill in small bowl. Stir until thoroughly combined; set aside.

Preheat broiler. Lightly spray rack of broiler pan with nonstick cooking spray. Remove salmon fillets from juice mixture; pat dry with paper towels. Place salmon fillets on prepared rack.

Broil salmon fillets 4 inches from heat until salmon flakes in center when tested with a fork, about 3 to 4 minutes on each side. Serve salmon fillets with dill sauce. Garnish with fresh dill and lemon wedges, if desired.

To get rid of the bones in a salmon fillet, Grandma ran her finger against the grain on a piece of salmon to make the bones pop up. She then pulled them out, using a pair of tweezers, and discarded the bones.
