Shrimp Skillet Stir Fry

Ingredients

  • 6 ounces snow peas
  • 6 medium green onions
  • 1 medium red bell pepper, seeded
  • 4 ounces large mushrooms
  • 1 tablespoon olive oil
  • 1 pound peeled, deveined medium shrimp
  • 2 tablespoons soy sauce
  • 1 tablespoon seasoned rice vinegar
  • 1 teaspoon sesame oil

Directions

    Snap off ends of snow peas and pull tough string down; discard ends and string. Set snow peas aside. Cut green onions into 1-inch pieces; set aside. Cut bell pepper into 1/2-inch strips; set aside. Cut mushrooms into quarters; set aside.

    Heat olive oil in large skillet or wok over medium-high heat. Add snow peas, green onions and red bell pepper; cook and stir-fry for about 2 minutes.

    Add shrimp to skillet; cook and stir-fry until shrimp turn pink, about 2 minutes.

    Add mushrooms; cook and stir-fry until tender and most of liquid evaporates.

    Combine soy sauce, rice vinegar and sesame oil in small bowl; add to skillet. Cook until thoroughly hot, stirring constantly, 1 to 2 minutes. Serve over hot cooked rice, if desired.
