Zesty Flounder Fillets

Zesty Flounder Fillets

Ingredients

  • 4 tablespoons butter
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons chicken bouillon granules
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice
  • 1 (10-ounce) package frozen chopped broccoli, thawed
  • 1 cup (4 ounces) shredded sharp Cheddar cheese
  • 1 pound flounder fillets
  • 1/2 teaspoon paprika

Directions

    Preheat the oven to 375F.
  • 2
    Spray 2-quart square baking dish with nonstick cooking spray.
  • 3
    Melt butter in small saucepan over medium heat. Add lemon juice, bouillon and pepper; cook and stir until bouillon dissolves in liquid, about 2 minutes.

    Combine rice, broccoli, Cheddar and 1/4 cup lemon sauce in medium bowl; spread on bottom of prepared baking dish.

    Place fillets on top of rice mixture. Pour remaining lemon sauce over fillets. Bake, uncovered, until fish flakes easily when tested with fork, about 20 minutes. Sprinkle fillets evenly with paprika. Serve fish immediately with vegetables, if desired.

    Variation: Substitute the flounder fillets with any mild fish, such as Dover sole fillets, tilapia fillets, pompano fillets or orange roughy fillets.
